		<description>My fig trees have so much fruitthat I have been preparing fig jam out of the day&#039;s harvest.  Yesterday I thought of making Fig Candy. I altered the recipe shown above.  No water, less sugar and substituted vanilla for the lemon (since I didn&#039;t have any lemons in my fridge. used up by my fig jam cooking).  Another thing, I put all ingredients and cooked.  I cooked twice.  First, just enough to get the sugar melted.  I let sit overnight.  Second cooking, bring the mixture to a boil and simmer until syrup has been reduced, not dry.  I poured the mixture in a greased pan and let cool and set. 

I turned each peice just to coat the pieces with the syrup (while still warm.
