2 lb Salt
1 lb Black pepper
1/2 lb Paprika
1/2 lb Garlic powder
1/2 lb Onion powder
Santa Maria Marinade for Tri-Tip Preparation
Remove all of the fat from the tri-tip. Pack on lots of the dried marinade and let it sit overnight in the marinade in the refrigerator. When ready to barbeque rinse off the tri-tip and pat dry with paper towels. Cook over oak or use wood chips (he prefers oak) of your choice. I am from Santa Maria born and raised. I love to eat food, I love to cook food, and I love to bbq. The best Tri-Tip I have ever had is a Salsa Marinade.
Combine Ranchero Salsa,
lemon juice,
worcestershire,
sliced white onion,
and whole peppercorns
in a plastic bag, throw in the Tri-Tip and marinade for 6 hours. Then grill as normal.. I sh*t you not, that is the tastiest juiciest Tri-Tip I have ever had. That marinade tenderizes the meat and contains the juices even after it is put on the grill. Try it. It is impressive.
