Miracle Pie Preparation

Blend all these ingredients in your blender and pour into a greased pie pan. Bake at 350 degrees for 1 hour. You don”t need a pie crust as this recipe cooks its own. Randy Rigg

1/2 c Sugar
1/8 ts Salt
1-1/2 c Scalded milk
1 ts Vanilla extract
1 9 baked pie shell
5 tb All-purpose flour
1/4 c Cold milk
3 Egg yolks
1 c Shredded coconut

Coconut Cream Pie #3 Preparation

Blend sugar,flour and salt with the cold milk.Add scalded milk, gradually,stirring constantly.Cook on a low heat until thick.Add beaten egg yolks.Cook 2 minutes longer.Remove from heat.Add vanilla extract and coconut.Cool then pour into previously baked pie shell.Cover with meringue (recipe follows).Makes one 9 pie. Meringue: use 3 egg whites to cover a 9 pie shell.Use 2 level tablespoons granulated sugar for each egg.Beat egg whites until stiff.(They should be glossy on top and when you invert the bowl, they should remain in place.)Fold in the sugar,gradually.Cover the pie with meringue. 1 pk 4 serving chocolate pudding

1/3 c Miniature marshmallows
1/3 c Chopped nuts
3 1/2 c (8 oz.) whipped topping
1 ea Graham cracker pie crust

Rocky Road Pie 2 Preparation

Pour half and half into large bowl.Add pie filling mix.Beat with wire whisk until well blended,about 1 minute.Let stand 5 minutes. Fold in whipped topping,chocolate chips,marshmallows and nuts.Spoon into pie crust.Freeze until firm,about 6 hours or overnight. Remove from freezer and let stand 10 minutes to soften before serving. Store leftover pie in freezer.

Yankee Fiddlehead Pie (Or Quiche) Preparation

Beat the eggs with lthe milk until blended. Fold in the chopped fiddleheads, leeks, and parsley, and half of the grated cheese. Season with salt to taste. Turn into the partially baked shell and sprinkle on the remaining cheese. Decorate the edge with whole fiddleheads. Bake in a preheated 350^ oven for 40 minutes, or until set.
